Pistachio Taffy Crunch Popsicles

It’s finally beginning to feel like summer here in SoCal, so I felt that I needed to create another popsicle recipe for the blog. Originally, I was hoping to get this recipe post up for St. Patrick’s Day, thus the green popsicles. Pistachio Taffy Crunch Popsicles may be green and perfect for St. Patrick’s Day, but they are actually great all year long…especially during summertime.

These popsicles are super simple to make because you used pistachio pudding mix. If you have read this blog for a while, then you know that I love making pudding popsicles. Some of my favorite recipes I have shared are –  these very popular rainbow pudding popsicles, or these red velvet popsicles that I made a few years ago.

To make these pistachio taffy crunch popsicles you need the following ingredients:

Ingredients
• Mother’s Taffy Cookies (any shortbread cookie will do)
• 1 box of Pistachio Instant Pudding Mix
• 2 cups of milk
• 1/4 cup Pistachios (unsalted if you can find them)
• Dixie Cups (i prefer 3 oz size)
• popsicle sticks

Directions:
• mix pudding and milk together and place in refrigerator.
• with a rolling pin, crush 5 cookies and pistachios
• layer, pudding first, then a sprinkle of pistachios and cookies. repeat until cup is filled to the top.
• push popsicle stick into the pudding
• place finished popsicles into the freezer for a few hours or until firm.
• enjoy!

I really love pistachios, so these popsicles are perfect for me. i especially love the flavor and texture the layer of cookies and pistachios brings. it’s dessert on a stick.

And if you use salted pistachios, you get that sweet and salty combo which is great too. Even my kids love these Pistachio Taffy Crunch Popsicles, and I hope you will too.

My Kids Love Rubio’s Fish Tacos

making family dinner has always been my weakness. i try really hard, but lately, my husband has been working late, i’ve had a lot on my plate, and baseball season is kicking my butt with practices and games for two kids…sigh. so we headed over to Rubio’s for some fish tacos.

a no-fuss dinner always makes me happy, and everyone could pick what they wanted…yay for no whining. the boys stocked us up on the fresh-made salsas, while mom and dad pretended we were at the beach enjoying the decor.

i could live on chips and guacamole.

hubby enjoyed the fish tacos. he had the original fish taco, a recipe perfect 30 years ago by Ralph Rubio, and the Avocado Corn Fish Taco which was his favorite!  a Rubio’s meal is no complete without their “no-fried” pinto beans and rice.

it’s been a while since i’ve been to Rubio’s and i forgot how much i liked it. the Shrimp, Grilled Chicken and Steak Tacos were delish and topped with my favorite…avocados, chipotle sauce, bacon and cotija cheese. yummy!

and the boys loved their food. “Best Shimp Tacos” they said.

sometimes you just gotta enjoy a meal out, and we were glad to enjoy the flavorful food a Rubio’s.
Things we especially appreciate about Rubio’s:
• Rubio’s menu includes seafood tacos, burritos, salads and quesadillas featuring shrimp, ono, wild salmon, mahi mahi and sustainable Alaska Pollock.
• Rubio’s chargrills their chicken and steak and the salsas, guacamole, “no fried” pinto beans, rice and chips are fresh-made.

i’ve been visiting Greenleaf Gourmet Chopshop for a while now, and love the freshness of their food and unique decor and feel of their restaurant space. i stopped in the other night to check out the new kids menu that is now available, and also to taste some of their yummy menu items.

my favorite by far was the Mini Turkey Burgers. i’ve never had such a wonderful turkey burger before….so sweet and juicy, and you could taste the freshness of the ingredients.

i also tasted the Organic Chicken Nugget kids meal, which is served with my kids’ favorite…sweet potato fries.

Greenleaf Gourmet Chopshop also has a great selection of made to oder sandwiches including this Vegetable Panini.

i absolutely love the thin crust pizzas. my favorite is the Wild Mushroom and Truffle, or this Spicy Turkey Sausage and Fennel pizza.

Greenleaf Chopshop also offers so many more great healthy options as well as easy grab n’ go items and fresh dressings that you can bring home. it also has a full service juice and coffee bar!

the Terrapin Puppet Theatre from Australia will perform the moving and poetic play Boats on April 6 and 7 in Samueli Theater. Boats is the story about a man named Jof, as told by his friend Nic. these two life-long friends and mariners, who met through bizarre circumstances involving a chicken, a deserted island and a sombrero, escape their past and embrace the unknown future with a great sense of adventure.

the magic of storytelling unfolds right in front of the audience as scenes are depicted featuringa crobatics and spectacular sound effects created on stage. the characters of Jof and Nic transform the world by using everyday objects that would be found on a boat’s galley. From a circus made from a jacket to a storm made in a teacup, such imaginative use of space and puppetry has garnered Terrapin with a global following.
