Homemade Veggie Pizza Pockets "Lunchables" for School Lunches

The kids are finally back to school, which means let the lunch packing begin! I don't know many parents who love packing lunches, but there is really no way around it. So I've been trying some new creative ways to to give my kids a wholesome lunch that they will eat. These Homemade Veggie Pizza Pita Pockets were a huge hit!

The key is making it fun and changing it up! Do you know how many times I send my kid to school with a full lunch box, only to have everything come right back home uneaten?!!! So frustrating! But here is a fun idea for Back-To-School lunch packing that might have them finishing their lunch!

And now to pack the lunches. I decided to try Veggie Pizza Pita Pockets and see if they would like them. They like pizza and the toppings, so I was hopeful.

Homemade Veggie Pizza Pita Pockets

As most kids, my boys love those pre-made DIY lunch kits such as Lunchables. They like the meat, cheese and cracker varieties, but their all-time favorites are the DIY pizza kits. So that's what I decided to make these.

To make the Veggie Pizza Pita Pockets, all you need is

  • Mozzarella sticks
  • Sliced veggies - bell peppers, cherry tomatoes, onions, etc.
  • Whole grain pita bread
  • Marinara sauce. (I used and organic brand).

I started by cutting the pita bread into quarters, and made sure to pull it apart so the boys could easily stuff them with pizza toppings. I also cut the cheese stick in have and pulled apart the tops so the were easy to shred.

To the other compartment, I added sliced up bell peppers and cherry tomatoes. Cucumbers, mushroom slices, zucchini, onions and even carrots would make great choices too. If you really want to add meat, you could do turkey pepperoni or vegan pepperoni. Whatever your kids will eat is what is best to use.

I filled a reusable condiment cup with marinara sauce.

When it's lunch time, the kids can have fun filling each pita quarter with sauce and then add their favorite pizza toppings to the pockets.

Pair your lunch with an organic milk box and an applesauce pouch and you're good to go. This could be a great lunch choice any day of the week. My kids were super excited to take this particular lunch to school, and they said their friends wanted to try them too.

Plus, don't forget a snack. The boys are love an additional snack on the go. These pretzel and nut snack packs are a fun snack kids love. Peel open before practice or pack it their lunchbox. Just toss them in with the lunch and they're good to go!
