The Best Gingerbread cookies

By Jill Parkin • Published: Dec 15, 2009 · Updated: Feb 2, 2021

i would have to say that one of my favorite memories of the holidays is making gingerbread cookies. i have been making them since i was very little, and i fondly remember making tiny gingerbread boys, gingerbread girls and don't for get the reindeer. we would then dip them into melted chocolate, giving the boys pants, the girls a skirt, and the reindeer chocolate antlers. and we would never forget a belly button or a rudolph nose compliments of a yummy red hot candy!

these yummies are next on my list of Christmas activities to do with the kiddies. and the recipe that i have used and love is below. the perfect amount of seasonings, molasses and honey in my opinion. and i am sure not to over cook, because i like my gingerbread cookies nice and soft!

Gingerbread Boys

cream together
¾ cup shortening
1 cup brown sugar

add and cream
1 egg
⅛ cup honey
⅛ cup molasses

slowly mix in
2-½ cups flour
2 teaspoons soda
2 teaspoons cinnamon
2-½ teaspoons ginger
1 teaspoon cloves
¼ teaspoon salt

• roll dough into a ball, then wrap tightly in plastic wrap.
• refrigerate 1 hour overnight.
• roll, out dough ¼ inch thick on floured surface.
• cut out gingerbread shapes.
• place onto ungreased cookie sheet 1 inch apart.
• bake at 350˚ for 10-12 minutes or until set. (just barely browned on edges)
• cool and decorate with royal icing.

gift idea: make and extra batch, wrap in wax paper, tie a ribbon and gingerbread boy cookie cutter to it. give to your friends!
