Lemon Herb Steak Foil Packet Summer Grilling Recipe

Lemon Herb Steak Foil Packets - perfect for camping!

Father's Day is going to be really fun for our family this year. the boys and i are going camping. we're very excited to be spending Father's Day with daddy. camping is my kids favorite thing to do. and i love to cook when we're out camping, especially grilling. so this week i have been trying out some camping-friendly recipes that can be made ahead of time to take along with us on our trip. one of my favorites that i would like to share is a Lemon Herb Steak with Asparagus created in a foil packet. made with all fresh ingredients and makes a great summer grilling recipe. the fresh lemon especially adds a wonderful summery flavor.

it was the perfect opportunity to get to check out Smart & Final's Cattleman's Beef selection. after a trip to Smart & Final, which you can check out here, i was able to create some great new summertime grilling recipes.

foil packet meals are great for camping because the clean-up is easy, they can be made ahead of time, they work great on the grill or campfire coals, and the food is protected from camping elements like dirt and ash.

after checking out all the Cattleman's Finest Beef products at Smart & Final, i decided to purchase thin-cut rib-eye steaks. thin-cut steaks work best for foil packet meals because the meat cooks in about the same amount of time as the veggies....8 - 10 minutes.

i was also able to find all my ingredients at Smart & Final like the asparagus, fresh lemon, rosemary and also the heavy duty foil.

to begin this recipe, generously season your steaks on both sides with salt and cracked pepper (i prefer Kosher salt, it tastes so much better).

on a piece of the heavy duty aluminum foil (approx. 12" x 12"), drizzle olive oil and dab with very small pieces of butter.

in the center of the foil, place a steak in the middle on top of the butter and olive oil. you want to make sure you will have at least a 2" perimeter of foil once all the food is placed down to seal your packet shut.

next, sprinkle a small amount of Thyme and place the sprig of rosemary over the steak. the rosemary will leave a strong flavor, so if you prefer a lighter taste of rosemary, use dried or just a few leaves of the fresh. take a thin slice off of your lemon half, and place it over the steak. then place your veggies and lemon half next to the meat.

once you have placed all your meal in the middle of the foil, lightly drizzle olive oil and dot with a few small pieces of butter.

Lemon Rosemary Steak Recipe - Great for camping

after you are done with the food prep, it is time to seal your foil packets shut.  place an identical piece of foil on top of your meal and fold the foil shut on each side. make sure to roll each side at least 2 times to prevent leakage of food juices.

with a marker, mark each persons initial on their packets so you know who's is who's when you take them off the grill.

once your packets are sealed and marked, place them onto the grill at medium-high heat.  grill them for 8-10 minutes (depending on how you prefer your meat), flipping them over halfway through cooking. when we are camping, we place them on the hot coals, a camping stove or on the grill that goes across the campfire.

when your meat is finished cooking, wait a few minutes for the foil to cool down before you open. with a knife, puncture foil in the middle of your packet, and fold the foil open to reveal your meal. you can eat it right out of the foil. enjoy!

Ingredients (for one packet):
1 thin cut steak (i used rib-eye)
½ lemon
1 sprig fresh rosemary
Dried Thyme
Salt (Kosher) & Pepper
Butter & Olive Oil
Heavy Duty Foil - 2 sheets (approx. 12" x 12")
Asparagus or your choice of vegetables

Directions:
preheat your grill or heat your coals on your campfire to medium high. on a piece of heavy duty tin foil (approx. 12" x 12"), lightly coat with olive oil and dot with butter. season both sides of your steak with salt and pepper. place the steak in the center of the foil. sprinkle with thyme, rosemary leaves and a slice of fresh lemon. place fresh vegetables and lemon next to the steak. dot with butter and cover with the second piece of foil over the top. seal each side of the foil shut. once your packets are sealed and marked, place them onto the grill at medium-high heat.  grill them for 8-10 minutes (depending on how you prefer your meat), flipping them over halfway through cooking. when they are finished grilling, let stand for 2-3 minutes before you open foil in the middle and enjoy.

        Tried these tonight, tasted really good. Took a little longer than suggested though, about 25 minutes, although the steak did get overcooked too.

        I'm going to try again tomorrow - any idea on timings of doing it in the oven? If I can cook them from both sides using the oven then I'll try that instead 🙂

      About 30 min, check it with a meat thermometer to 160 degrees F. Just poke the prong right through the packet into the steak. you can throw them in a air fryer also
