How to Make Semi-Homemade Ice Cream Sandwiches Hack

We spent this past Memorial Day weekend taking it easy and hanging around the house. I made the kids these yummy semi-homemade ice cream sandwiches. You might think they look really fancy, however they took less than five minutes to make.

We really enjoyed eating them…and they were perfect for the hot sunny weather.

How to Make Homemade Ice Cream Sandwiches

To make these Semi Homemade Ice Cream Sandwiches, all you need is ice cream and some giant cookies. If you want to get all fancy, you can make the cookies from scratch, but I went the easy route and used Costco bakery cookies. They're the perfect size for ice cream sandwiches. Plus they are nice and chewy.

You will also want to get a variety of toppings. Chocolate chips, sprinkles, nuts or crushed candy are great to role the ice cream sandwiches in. This is what will make your treats extra fancy and elevated! And of course...even more fun.

Fancy Homemade Ice Cream Sandwich Hack

Small little pints of ice cream make the perfect size of ice cream scoops for Costco cookies. The trick is…DON'T SCOOP IT! You can just slice it in the container. Make sure the ice cream is frozen solid, then use a serrated knife to cut through the entire carton of ice cream, including the cardboard.

Once you slice the ice cream, place each slice of ice cream onto a cookie.

If you find that your ice cream is a little soft, just squeeze out the entire pint of ice cream, and then slice it. One small pint of ice cream is enough for five Costco cookies. You can also use any ice cream you have on-hand and scoop it on the the cookie…but this method is just super easy.

Now, top each cookie and ice cream slice with another cookie to completed each sandwich.

Finally, roll each of the ice cream sandwiches in toppings. You can do them all the same, or mix it up and use different toppings on each.

Then either eat them immediately before they melt, or wrap with plastic wrap and place in the freezer until they are ready to be eaten.

My boys loved the ice cream sandwiches, and pretty much thought I was the coolest mom ever. little did they know that i spent less then five minutes making them. I'm sure we will be making AND eating these all summer long.
