Preheat your oven to 350.
Grease a medium sized rimmed cookie sheet.
Slice your cookie dough and place it all over the cookie sheet.
Spread the cookie dough together filling in the gaps to cover the pan.
Bake 8-12 minutes until golden brown.
Let the cookie crust cool completely.
Meanwhile in a medium skillet over medium heat add the apples and butter.
Cook for 5-8 minutes until apples are slightly tender.
Add the caramel to the pan and stir to combine.
Set aside to cool.
Meanwhile in a medium bowl using a hand mixer whip together the softened cream cheese, powdered sugar and vanilla.
Spread the cookie crust evenly with the cream cheese mixture.
Next add your cooled apples and caramel mixture and carefully spread across the top.
Chill for an hour.
Slice and serve!!
