Night Cereal: Thai Peanut Crunch

Brought to you by got milk? Food Loves MilkAdvertisement

Goodnight_dinner_cereal_pad_thai

did you know that “Night Cereal” was a thing? well apparently, high profile chefs around the country are now creating savory… not sweet… “Night Cereal” dishes for their customers. i shared this with my boys… who want to think they will be the next Junior Chefs, and they thought it would be fun to concoct their own version of “Night Cereal.”

we thought and thought about what kind of cereal cuisine we could create. something really unique. when it comes to unique cuisine, my boys aren’t very adventurous. however, they do love Thai food, and we often go to a special nostalgic Thai food place in Los Angeles. they love this place, so why not create a twist on Thai food.

Rockin_Thai_food_Toi_On_Sunset

the boys thought it would be fun to create a Pad Thai / Peanut noodle version of “Night Cereal.” Pad Thai is one of their favorites dishes, and what goes better with milk and cereal than a little peanut butter? this was definitely going to be a culinary experience!

to start our culinary cuisine, we needed our hero ingredients! ice cold milk and Corn Chex cereal. you definitely can’t eat cereal without milk.

Milk_and_cereal

the rest of the ingredients are pretty simple. besides the milk and Corn Chex cereal, we also needed Thai rice noodles, scrambled egg, bean sprouts, shredded carrots, chopped green onions, and a special peanut Pad Thai sauce.

Thai_crunch_goodnight_cereal

we filled our bowls with cereal, and then stacked the noodles, bean sprouts, carrots and scallions on top. we also sprinkled some of the scrambled egg around.

next, we added a special peanut Pad Thai sauce over the top. it is a mix of onions, butter, soy sauce, Siracha, peanut butter and apple cider vinegar. i have included the recipe below. this sauce is really yummy!

best_noodle_peanut_sauce

Thai_peanut_noodles

finally, to finish off our “Goodnight Cereal” we had to top it off with milk. as the boys say, milk and cereal are best friends!

pouring_milk_on_weird_cereal

now it was time to try our creation. i must say, it actually was good! you probably wouldn’t expect it, but it tastes almost like our favorite Pad Thai. the Corn Chex added a great crunch, and milk tastes great with peanut butter.

Fruit Salad Popsicles with Simply Orange

Orange Juice Popsicle Recipeas you may recall, earlier this year i shared with you, that last year i began to have a lot of stomach issues. i had to start being very careful with what i eat…which means only eating foods that are easy to digest and low acid. i decided to go vegetarian because meat was hurting my stomach. this also meant i couldn’t drink a lot of juice….especially orange juice. anything with acid upsets my stomach. it’s been tough, as i miss a lot of foods that i used to eat. being pregnant has made my stomach even more sensitive. but, i am feeling lucky because i just partnered with Simply Orange to share about their new low acid orange juice called Simply Orange Low Acid which just launched this year.Simply Orange Low Acid OJSimply Orange Low Acid is 100% pure squeezed orange juice with calcium and is just as yummy as the other Simply Orange varieties. but Simply Orange Low Acid has reduced acid for a smooth, mild taste – a great choice for anyone who loves the delicious taste of orange juice, but may be sensitive to acid. it is never sweetened, concentrated or frozen, and has no preservatives, colors or artificial flavors. it’s the next best thing to freshly squeezed.

Simply Orange Low Acid Orange Juicei have really been enjoying Simply Orange Low Acid…i have missed drinking orange juice. and because it is summer, the boys and i thought it would be fun to make some Fruit Salad popsicles. all you need to make them is your favorite fruit, orange juice and popsicle molds. we made them with the Simply Orange Low Acid, so that i could enjoy eating them too. wow…they are good, especially on hot summer days.

Build Your Own Tart Station

Thank you C&H® Honey Granules for sponsoring this post. Visit your local retailer to pick up your own package and start sprinkling sweetness today!

Fun Food Ideas for Easter or Mother's Day

spring events are coming up – Easter, Mother’s Day and bridal showers. it’s my favorite time of year to host parties because there are so many possibilities of yummy food to serve. fresh fruit and vegetables are in abundance – which i love to serve in beautiful arrangements. i’ve had the idea of having a “Build Your Own Tart Station” for a while now, and when i was asked to create a recipe that uses C&H® Honey Granules, i knew it was the perfect opportunity to finally create it.

i am so glad that i did, because my “Build Your Own Tart Station” turned out adorable. but what i didn’t expect, was how much fun and yummy it would end up being. my boys especially love it. they made the cutest little tarts with fruit patterns, sprinkled with toppings..they looked like they belonged in a bakery. i am now definitely going to create this again at my next party. let me share how i set it up – it’s really easy to do and your guests are going to be impressed.

first, i purchased a bunch of different berries and fruit that would taste great in a fresh fruit tart – raspberries, blueberries, blackberries, strawberries, kiwi and bananas (which you will want to cut at the last minute to prevent them from turning brown). i found these great berry baskets at my local craft store to display them in.
Easy Fruit Dessert RecipePie Barnext, you will need the pie shells for the tarts. you can make them, or grocery stores sell these mini graham cracker pie crusts ready to go. they are perfect for a “Build Your Own Tart Station”. i placed them on a cake stand under a glass dome just because i thought it looked pretty.

Desserts with Graham Cracker Crusts

for the tart filling, pudding works great. i just made boxed banana and chocolate pudding. but any flavors you like would be great…lemon curd or jam would also make great fillings.

Build Your Own Pie Station

then i included toppings. i chose C&H® Honey Granules, shredded coconut and sliced almonds.

Easter and Mother's Day Dessert Ideas

what i love about using C&H® Honey Granules is that it let’s you Sprinkle a Taste of Honey!  which is the perfect amount of sweetness to add to the tarts. C&H® Honey Granules is a free-flowing mix of granulated pure cane sugar and honey that can easily add a sweet honey taste to teas and cereals, or can be measured for recipes. it also comes in an easy-pour canister with a recloseable flip-top lid, but for my tart station, i poured it into a decorative bowl. did i mention how good it tastes? it’s really yummy. the sweetness of C&H® Honey Granules is equal to 1 ½ x that of honey – 1 ½ tsp. of Honey Granules = Sweetness of 1 tsp. honey. and it can often be substituted for fluid honey by using this conversion: 1 cup liquid honey = 1 cup C&H® Honey Granules + ¼ cup additional recipe liquid.

C&H® Honey Granules is sold where i live, but if they don’t sell it in your area, look for Domino® Honey Granules, the sister brand of C&H®.

and finally, don’t forget the whipped cream. i made homemade…which i love best. but you can also use whipped cream in a can.

Make Your Own Better For You Granola…it’s EASY!

This is a sponsored post.Easy DIY Granola

my husband has been raving about my friend’s homemade granola for months. he’s been telling me all about how it tastes much better than store bought, and how he wanted me to get the recipe. so when i had the opportunity to try McCann’s Steel Cut Irish Oatmeal®, i knew i wanted to try making my own homemade granola with it.

McCann’s Irish Oats are rich, and have a unique, nutty taste. what i love about them is – there is minimal processing, nothing added, nothing artificial and they made from 100 percent whole grain Irish oats. McCann’s Steel Cut Irish Oatmeal recently earned its first Non-GMO Certification from the Non-GMO Project for three of its products – McCann’s Steel Cut Irish Oatmeal in the 28 oz. Tin, McCann’s Quick & Easy Steel Cut Irish Oatmeal in the 24 oz. Canister and McCann’s Steel Cut Irish Oatmeal Quick Cooking Rolled Oats in the 16 oz. Box. and like it’s name, McCann’s Irish Oats are grown on the lush Irish countryside where some of the finest oats in the world are found. not only do they make great oatmeal in the morning, they also ended up making a great homemade granola.

McCanns Irish Oatmeal

when researching how to make homemade granola, i found out that it is very simple, and that you don’t have to stick to an exact recipe. you can add a variety of things to the granola and make it your own….just by sticking to these basic guidelines:

How to make you own Homemade Granola

ingredients
4-5 cups McCann’s Irish Oats
1 cup raw nuts or seeds
1 cup dried fruit
1 cup shredded coconut
1 Tablespoon of your favorite spice (cinnamon, pumpkin pie spice, cardamon, etc.)
1/2 to 1 cup of butter, oil or coconut oil
1/4 teaspoon salt
1/4 cup of sweet (brown sugar, honey, agave or syrup)
2 teaspoons of vanilla or almond extract

directions
Combine all ingredients and spread on a baking sheet. Bake at 350º for 30-45 minutes until golden brown. let cool. store in an sealed container. (remember, you can adjust any of the ingredients of this recipe to your liking.)

my homemade granola turned out pretty tasty! i ended using almonds, apricots, cinnamon, brown sugar and vanilla as some of my ingredients. it was nice and crunchy with a yummy nutty flavor. i can wait for my hubby to get home and try it. hopefully he will like it as much as my friends!

Bacon Wrapped Meatloaf with Boysenberry Barbecue Sauce

Bacon Wrapped Mini Meatloavesthe other day, i ran over to the Berry Market at Knott’s Berry Farm to pick up some of their Berry Market brand items to create a yummy recipe. Berry Market has all sorts of jams, preserves, sauces and syrups, many which are famous all over the world. the Berry Market products are also available online, so if you don’t live here in Southern California, you can still get them. i had no idea what i was going to make, but i picked up a bunch of items that caught my eye and headed home to create a delicious recipe. the Berry Market Boysenberry BBQ Sauce jumped out at me. it was one of my favorite things during the Knott’s Boysenberry Festival, so i decided to create a recipe around it. that is how Bacon Wrapped Mini Meatloaves with Boysenberry Barbecue Sauce were born.

the recipe was a hit. the Bacon Wrapped Mini Meatloaves with Boysenberry Barbecue Sauce came out super yummy, and not hard at all to make….even if they look a bit complicated. you can create this recipe in under 30 minutes, and if you prefer to make this recipe in a single loaf instead of individual loaves…that will work just fine. the Berry Market Boysenberry BBQ Sauce has the best flavoring and the surprise of melted cheese oozing out of the loaf, will make this recipe a favorite for years to come.Easy Barbecue Stuffed Meatloaf Recipe

on a baking sheet, start forming the mini meatloaves. you can place them on top of a piece of parchment paper if you would like. this recipe makes 6 palm-sized meatloaves. i like to use the lid of a large mason jar to make all my loaves uniform in size. it works perfectly. use half of the meat to create the bottom halves of the mini meatloaves.

How to Make Barbecue Mealoaf

gently press the meat into to lid until it is formed into a patty, and lift the lid off. be carefully not to press or compact to much, you don’t want the meatloaf to be tough and dense.

Cheese Stuffed Meatloaf

you will end up with 6 loosely formed meatloaf patties.

Individual Meat Loaves

now place a piece of cheese in the center of each meatloaf. i prefer to use 1/2 of a piece of string cheese cut in half for each loaf.

Mozzerella Stuffed Meatloaf

using the last half of the meat, create a top for all of the mini meatloaves. i use the mason jar lid again to make sure they are nicely formed. make sure that the cheese is fully covered and the sides are sealed shut.Bacon Wrapped Meatloaf

next, wrap a slice of bacon around each of the meatloaves. i prefer to use thick cut bacon slices. gently squeeze the loaves as you wrap to create a nice round loaf with the bacon neatly wrapped. you can use a toothpick to hold bacon ends together if you need to.
